Hi, I’m Nicole — the baker and owner behind CookieYo, a cottage bakery in Colorado Springs. I’ve been baking cookies since I was 10 years old, experimenting in the kitchen and sharing cookies with friends and family.
Now as a mom of three, I care just as much about what goes into cookies as how they taste. I realized they could be just as soft, chewy, and delicious when made with wholesome, plant-based ingredients.
That idea became CookieYo: delicious and wholesome home-baked cookies that we can feel good about eating and sharing. Cookies aren’t just about enjoying a sweet treat- they’re also about enjoying the sweetness in life and sharing that with others.
